This stunning 17th Century Food led Pub located in the heart of North London has built a strong reputation for offering fantastic rustic seasonal Gastro food all year round.

Promoting Game in season, Nose to Tail style dishes & the Best of British – the Pub Venue features quirky Dining Rooms, an Open Kitchen (plus additional prep Kitchen), Regency style interiors & an Outdoor Dining area.

7 day Operation (Lunch & Dinner) & Exclusive Venue Hire / Private Dining

Role

Working closely with the General Manager and supported by a Group Area Chef, responsibilities include:

Menu planning, costing and specification for the Dining Room, Bar & Private Events
(Menu Autonomy within Concept)

Overseeing daily kitchen operations, leading and directing a brigade of 4 – 6 chefs
Stock control, liaising with quality suppliers, purchasing, auditing (GP margins) & wastage control

Chef rotas, recruitment, training and development

Hygiene, Health & Safety records and procedures, cleaning schedules

General bookkeeping, administration and accounting

Management meetings

Contracted to work 7 shifts over 5 days, Benefits include achievable KPI / GP related bonus targets (paid quarterly), regular performance related salary reviews, external courses, excellent movement and progression opportunities (Area Support role) within independent group with 2012 to 2015 expansion plan in place.

Candidate Profile

Proven Head Chef experience gained within quality Gastro and / or Grill Establishments with knowledge of British cuisine essential

Strong Leadership, Communication, Organisation & Technical Skill

Genuine Passion to Cook with ability to deliver in busy Kitchen operation

Ability to Motivate & Train team members effectively

Strong on Due Diligence – up to date on current Hygiene Legislation

Salary & Benefits

£30,000 – £34,000 Basic Start Salary + KPI related Bonuses (Paid Quarterly / min. £4,000 pa available)

3 Months Probationary Period: Regular Performance Related Salary Reviews
