Scope:

To control the section ensuring smooth operation and at all times maintaining The Dorchester standard.

Main Duties:


  • Delegate tasks to Commis Chefs, ensuring that the mise-en-place is in place

  • Write food requisitions for the approval of the Premier Sous Chef or Sous Chef

  • Carry out one-to-one on the job training

  • Check on a daily basis portion, size and quality of the deserts prepared by your team

  • Attend daily and monthly meetings with the Premier Sous Chef and Sous Chef or any other meetings as requested by the Executive Chef.

Requirements:


  • City and Guilds 706/1/2, NVQ Level 3, or similar qualifications.

  • Previous experience as Chef de Partie in a 4 or 5 star hotel

  • Very good knowledge of classic French, nouvelle, British and international cuisine.

  • Good level of spoken and written English

  • Well groomed and presented

  • Eligibility to work in the United Kingdom
